Welcome to Feed My Face Fridays! If you are anything like my friends and I, feeding your face is one of your favorite pastimes, and something you do too well! This week we are going to party with an old school casserole and jazzy it up a bit! This is seriously one of my favorite dishes! It’s easy to make and super ridiculously delicious. You will have plenty of leftovers for that hungry family of yours, and it’s freezer friendly for all my sassy singles out there!
Serves: 4-6 ppl
- 2 Cups Cooked Pulled Chicken (Canned, Baked, or Rotisserie)
- 1& 1/2 Cup Cooked Rice
- 2 Cups Steamed Broccoli
- 1 Can Cream of Chicken
- 1 Can Cream of Mushroom
- 3 Cups Sharp Cheddar Cheese
- 1 Cup Crushed Cheese-It Crackers
- 1 Egg
- 1/2 Cup of Milk
- 1 Tsp. Salt
- 1 Tsp. Pepper
- 1 Tsp. Garlic Powder
- 1 Tsp. Onion Powder
Preheat the oven to 350º. Lightly grease a 13×9 dish.
For my shredded chicken, I cooked some Chicken legs and thighs in my crock-pot ( Best invention EVER!!!) and shredded it with a fork. For the Broccoli, I popped them in the microwave for about 2 minutes.
Now it’s time to mix. in a large bowl, combine the: Chicken, Broccoli, Rice, both Cans, 1 Cup of Cheese ( I just use half the bag, it doesn’t need to be exact), Salt, Pepper, Garlic and Onion Powder. Combine well.
In the dish, sprinkle about 1/3 of the reserved Cheese on the bottom, add 1/2 of the Rice Mixture, another 1/3 of the Cheese, the remaining Rice Mixture, and top with the rest of the cheese.
In a small bowl, whisk together the egg and milk. Pour on the edges of the dish. This helps the mixture to really hold together. Cover with aluminum foil and back for about 20 minutes.
Remove the foil and top casserole with crushed Cheez-Its, and return to oven. Bake for another 10 minutes. Remove from oven, and allow to rest. And Enjoy!
